The Vineyards: The grapes for this wine come from our finest vineyards in Merom Hagalil, the high mountains of the Upper Galilee.
Wine production: After the wine was completed, including malolactic fermentation, it was aged for 15 months in new American and French oak barrels. Tasting Notes: The Reserve Cabernet Sauvignon is a dark purple wine that is full of forest berries and eucalyptus character, combined with elaborate vanilla notes, chocolate and tobacco. This wine lingers on the palate for a long time and is gentle and deeply satisfying. A first-class wine that can be enjoyed on any occasion.
Serving suggestion: This wine is particularly suitable for heavier meals, such as roasted beef, leg of lamb or lamb chops, or even vegetarian stew. Otherwise you can enjoy the wine without any additives and simply as a truly excellent wine.

These grapes for this wine came from our finest vineyards in Merom Hagalil, the highlands of the Upper Galilee. Dalton is a basalt plateau at an altitude of 850 meters above sea level, which is beginning to be recognized as one of the premier growing regions of Israel.
During fermentation the grape cap was gently irrigated several times a day gently increasing the depth of color and levels of extraction in the wine. Towards the end of fermentation the wine was pressed out and the free run was separated and used to make this wine. Malolactic fermentation was encouraged, and once complete the wine was racked into new American and French oak barrels and allowed to mature for about 15 months.
Tasting notes: The Cabernet Sauvignon Reserve is a dark purple wine and is full of forest fruit and eucalypt characters, along with more complex notes of vanilla, chocolate and tobacco. The depth of color and complex aromas give an excellent indication of what this wine currently has to offer, and how it will develop in the bottle. The wine is long on the palate and is smooth and deeply satisfying. This is a premium wine to be enjoyed at one's leisure.
Food pairing: This wine is particularly suitable for heavier meals, for example roast beef, leg of lamb or lamb chops. For vegetarians we could recommend you drink this wine with a heavy winter stew with lots of eggplants and tomatoes, alternatively you could drink the wine alone and just enjoy a truly excellent wine.
