The wine:
The idea behind this wine was to create a Chardonnay with as little interference as possible. Dalton distanced himself from the typical heavy oak style of Chardonnay to produce a much lighter and fruitier wine that represents the fruit much better and is easier to drink.
Winemaking:
The grapes were picked by hand at the end of August. The proximity to the winery allowed the grapes to be crushed and left to rest immediately. Only the juice released was used for this wine. The must was transferred to stainless steel tanks for cold fermentation, without any oak influence. After fermentation, the wine was left on the lees for another month to mature further.
Taste:
A fruity wine with balanced acidity that is overflowing with citrus and tropical fruit aromas; especially peach, apricot and a little melon. This wine offers a new and exciting facet of Chardonnay in Israel. Chardonnay Unoaked is intended for immediate consumption and should not be stored for long periods of time.

Dalton Chardonnay is an excellent accompaniment to baked fish dishes, grilled tuna, veal, grilled chicken or pasta in cream sauce.
