Tabor began growing this exceptional, expressive wine in 2009. The Shifon vineyards are located at an altitude of 950m above sea level. The wine matured in French oak barrels for at least 18 months. The wine is very fruity, aromatic (of raspberries), rich in contrast, rich in tannins (which is also the name) and sometimes acidic. In order to achieve a rounded effect on the tannins, long storage in wooden barrels is necessary. The wine is often made with other varieties (Cabernet Sauvignon, Cabernet Franc) as a cuvée in order to achieve more complexity with lighter varieties. The wine also has a very long shelf life due to its high tannin content.
Tannat has been considered the “healthiest” red wine since Roger Corder’s research results were published in the scientific journal Nature[3]. (See also Wikipedia)
