This wine was produced from 85% Cabernet Franc grown in the Mata vineyards near Jerusalem, and 15% Merlot.
Mostly is an up-to-date collection of blends, where the dominant variety gives the wine its name. These wines are aged for 12 months in French/American oak barrels. The grapes went through alcoholic fermentation for some two weeks and rested atop the grape skins for an additional number of days.
The grapes were only lightly pressed before being transferred to barrels for ageing. The Merlot and Cabernet Franc grapes were fermented and aged in separate barrels. After a period of six months in the barrels, during which the wines’ flavours stabilized, the final blend was determined in order to receive complexity and harmony. After creating the final blend, the wine was returned to the barrels to age for an additional nine months.
This wine has a very deep maroon red colour and pomegranate edges. The wine is full-bodied with a festive aroma of purple flowers, grass, green pepper, ripe red and black fruit and a bit of toasted wood. Its flavour is at once robust and round, invigorating and fruity. The tannins are gentle and piquant, with a long finish that is full of life.
Food pairing: Meat chop (e.g. fillet steak and sinta), Asian food (especially with Sichuan sauce), livers with wine dishes and light pasta's dishes on olive oil basis
