Made exclusively from a single vineyard grown at an altitude of 700 meters on Mount Malkia in the Upper Galilee, this Cabernet Sauvignon plot was carefully chosen among the winery's vineyards. The warm growing season of 2010, characterized by moderate weather and devoted care lead to ideal ripening of concentrate d rich fruit. The grapes were hand-picked and received at dawn in the winery and gently de-stemmed. The must went through a 14-day controlled fermentation on the skins after which the unpressed free-run juice went through a malo-lactic fermentation and aged for 18 months in new French oak barrels. Once bottled, the wine aged for an additional year in the winery cellars giving if further depth and complexity. This well balanced full bodied wine has a deep cherry-purple color. With rich aromas and flavors of black fruits, fresh plums and cassis, with gentle hints of clove and Mediterranean herbs, its lush and velvety tannins contribute to the wine structure and lead to juicy and long finish.
