This wine was made from 100% Cabernet Sauvignon grapes from the Kfar Yuval vineyards, probably the northernmost vineyards in Israel. The grapes were selectively harvested by hand in the early hours of the morning.
The wine was fermented with the addition of yeast cultures for a period of two weeks in a slow and controlled process, without adding much heat to preserve the fruity character, leaving it to rest on the mash for a few more days. After the first fermentation was completed, the wine was gently pressed. Only the juice from this gentle pressing underwent a second fermentation and was matured in 805 French and 20% American oak for the following six months.
The wine has excellent soft, pleasant tannins and a good acid structure. The color is a sparkling red and the aroma is fruity and characteristic of the Cabernet Sauvignon variety.

100% Cabernet Sauvignon. This wine was produced from Cabernet Sauvignon grapes grown in the Tizvon and Kfar Yuval vineyards in the Upper Galilee. The grapes were selectively harvested by hand from the vineyard's choicest plot in the early morning hours.
The wine was fermented with the aid of cultivated yeasts for a period of two weeks in a slow and controlled process, without releasing much heat (in order to perfectly preserve the characteristic fruity aromas) and then rested on the skins for an additional number of days . Upon completion of the initial fermentation, the wine went through a light press. Only the free run liquid remained for a second fermentation and for the subsequent six months of aging in oak barrels, 80% of them French and 20% American oak.
The finished wine has excellent soft, pleasant tannins and good acidity. It has a glittering maroon red color. The aroma is fruity and characteristic of the Cabernet Sauvignon variety. Food pairing: BBQ, rich chicken stew, Mediterranean and Italian dishes.
